Bij Los Nogales wordt het verwerkingsproces niet als een laatste stap gezien, maar als het middelpunt van het werk. Deze Typica-partij is selectief geoogst, gefloten, ontpulpt en vervolgens onderworpen aan een verlengde fermentatie en meerdere wasfasen, voordat hij langzaam werd gedroogd onder gecontroleerde temperatuur en luchtvochtigheid.

Achter die precisie zit het bredere drie-boerderijenproject van Oscar Hernández in Huila, dat is opgebouwd rond exotische variëteiten, bodemgezondheid, milieubeheer en technische experimenten. Op 1.870 tot 2.000 meter in Pitalito is Los Nogales een van de duidelijkste voorbeelden in Colombia van wat er gebeurt wanneer landbouwkunde en ontwerp na de oogst als één discipline worden behandeld.
