Category: Horizons. Expressive and unique.

Los Nogales treats processing less like a final step and more like the centre of the work. This Typica lot was selectively harvested, floated, depulped, then taken through extended fermentation and multiple washing stages before slow drying under controlled temperature and humidity.

Behind that precision is Oscar Hernández’s wider three-farm project in Huila, built around exotic varieties, soil health, environmental management and technical experimentation. At 1,870 to 2,000 metres in Pitalito, Los Nogales has become one of Colombia’s clearest examples of what happens when agronomy and post-harvest design are treated as one discipline.

Joseph C. ★★★★★

The extended fermentation really comes through in the cup—there’s a depth and sweetness I don’t usually get from a Typica, and the selective harvesting shows in how clean and uniform the beans are. I brewed it as a pour-over and it’s easily the most expressive coffee I’ve had this month.

You can really taste the extra care in the processing here—the extended fermentation gives it a depth that feels deliberate, not accidental. The selective harvest and float step must be doing something right, because every sip is clean and expressive.

The selective harvest and float really paid off—this cup is clean and bright, with a depth that lingers nicely. I’ve been brewing it as a pour-over and the extended fermentation adds a subtle, almost wine-like twist that keeps me coming back.
