Category: Chocolate

Made with single-estate cacao from Hacienda Victoria, this 66% Ecuador dark chocolate is blended with toasted sourdough crumbs from Pump Street’s own bakery and finished with a touch of Halen Môn sea salt. Deep cocoa notes meet rich malt and toasted breadcrumb flavours, while the sourdough adds a subtle crunch and savoury complexity, a distinctive bar that balances texture with intensity.

Pump Street’s background as a bakery makes this bar a natural extension of their craft. Their commitment to ethically sourced cacao, traditional baking techniques and small-batch bean-to-bar production underpins this innovative bar - believed to have been the first chocolate made with sourdough when originally launched.

Ingredients:
Cocoa beans, cane sugar, cocoa butter, sourdough breadcrumbs (12%) (wheatflour with added calcium, iron, niacin and thiamine, sea salt), Halen Môn sea salt (<1%). Dark chocolate contains minimum cocoa solids 66%. For allergens, see ingredients in bold. May contain milk, eggs, nuts and sesame seeds.

The salt hits first, then the chocolate melts into this deep, earthy sweetness, and the sourdough bits add a subtle toastiness that keeps every bite interesting. That 66% balance is spot-on — rich without being bitter, and the crumb texture makes it feel more like a snack than a fancy bar.

The crunch from the toasted sourdough bits is the star here—it hits right after that smooth 66% melt, and the sea salt ties it all together. I've already finished two bars this week, it's dangerously good with a mug of black coffee.

George ★★★★★

The sourdough crumbs give it this subtle, toasty crunch that melts into the chocolate—such a clever texture pairing. The sea salt hits right at the end, and the 66% cacao keeps it rich without being bitter. Gone in two sittings, which says enough.
