Rwamatamu a été fondée en 2015 par le couple Gaston Rutaganda et Laeticia Mukantwaza dans l'ouest du Rwanda. Parallèlement à la production de café, le projet investit massivement dans des initiatives communautaires, soutenant les femmes et les jeunes agriculteurs grâce à des formations, l'accès à la terre et un développement à long terme.

Ce lot de Red Bourbon naturel a été traité à la station de lavage Mbare de Rwamatamu, où les cerises sont triées à la main et séchées lentement sur des lits surélevés pendant plusieurs semaines. Un retournement et un tri minutieux tout au long du séchage permettent de développer la douceur et la complexité fruitée, tout en préservant la structure et la clarté associées aux cafés rwandais de haute altitude.
